Jill’s e-book is a treasure of delicious recipes. For those of you who would prefer an actual book rather than an e-book, the hardcover will be published this fall I believe. Or better yet, get the e-book now and buy the hardcover later. That way you’ll have a copy to hold in your hands and browse through. When you find one you want to make, print it from your e-book copy – no struggling to make the book lie flat or splattering ingredients on it.<br /><br />I would also highly recommend Jill’s DVD, Pressure Cooking: A Fresh Look Delicious Dishes in Minutes. <br /><br />http://www.pressurecookingonline.com/<br /><br />The DVD includes step-by-step instructions for 14 dishes from breakfast to dessert. A printed booklet containing all the recipes is included so you won’t have to scramble to write down the recipes as you watch. Italians use a 4:1 ratio for making risotto in the pressure cooker. Even though you used 3.5:1.5 your rice was under-cooked because you did not consider the liquid from the mushrooms in your calculations. Personally, I used dehydrated porcini so that the ratio is not affected much. When I use white mushrooms, I just brown a few with the onion and the rest I plop in my measuring vessel with the stock to toss in at the end so that I get the right amount of liquid. <br /><br />Also, we only do a 7 minute cooking time and it comes out perfect every time!
